Australia’s united food and wine team heads to Taiwan

Cream Cheese and Smoked Salmon Mille Crepe Cake

Ingredients

1. Australian cream cheese 180g
2. Toast 2 pcs
3. Smoked salmon 180g
4. Yellow lemon 1 pc
5. Dill 8g
6. Caviar 20g
7. Edible flowers 6pcs
8. Chives 3pcs
9. Australian plain yogurt 45g
10. Salt to taste
11. White pepper to taste

Directions

1. Flatten the bread slices with a rolling pin, then cut them into 2 cm x 2 cm squares. Toast both sides until golden and set aside.
2. Mix the cream cheese with plain yogurt, lemon juice, lemon zest, and chopped dill, then season with salt and white pepper. Set aside.
3. Layer the smoked salmon slices and cream cheese mixture alternately to form a mille-feuille style cake, then cut into 2 cm cubes.
4. Garnish with a dollop of cream cheese, caviar, and decorate with edible flowers and chopped chives.
